Summer Fruit Pizza

Summer Fruit Pizza

Summer fruit pizza is the perfect dessert to bring to a summer cookout or party.  This light and refreshing treat will please the palate of both adults and children.  You can use whatever fruits you have on hand.

Ingredients:

Refrigerator Sugar Cookie Dough, softened
1 – 8 oz. bar cream cheese, softened
1/4 cup marshmallow fluff
1/4 cup sugar
1/2 tsp. vanilla
fruit for garnish – 
blueberries, strawberries, kiwi, mandarin oranges, 
blackberries, raspberries, pineapple, etc.
1/4 cup Apricot jam
1 tablespoon water
 1. Spray a 13″ pizza pan with cooking spray.  Cut a circle of parchment paper and place on pizza pan.

2. Arrange slices of cookie dough and press together to form circle.  Cookie dough will expand while baking.  

3. Bake in a preheated 375* oven for 15 minutes.  Remove when golden brown and cool for 20 minutes.
4. Slide parchment paper out from under cookie.
5. Mix together softened cream cheese, marshmallow fluff, sugar and vanilla. Spread mixture on cooled cookie.
6. Decorate with fruit.

7. Mix together apricot jam and water and heat in microwave for 15 seconds.  Brush apricot mixture on top of fruit.

8. Cut with pizza cutter and serve.

    Yum! I haven’t made this for years, but you’ve inspired me to pull out my recipe and make it for the next family gathering. Everybody loves it!

    This looks delicious!
    I would love to make this over the summer, but my boyfriend is lactose intolerant and I’d want him to try a piece too. Any alternatives to cream cheese I could use?

      I am allergic to dairy and I use Tofutti Cream Cheese. It’s very good and no one knows the difference.
