Caramel Frosted Banana Apple Spice Cake

Say that ten times fast. This is your basic banana bread on steroids. The added apples, pumpkin pie spice and caramel frosting take this banana bread to the next level … cake. It’s a yummy, fruity, spiced apple cake perfect for fall entertaining.

Banana Apple Spice Cake with Caramel Frosting

Ingredients

  • 2 - 3 ripe bananas (mashed)
  • 2/3 cups brown sugar (packed)
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 2/3 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 large or 2 small apples (chopped)
  • 1/3 cup chopped walnuts (optional)
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 2 tablespoons cream
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup confectioner's sugar

Directions

1. Preheat oven to 350*F. Grease an 8 1/2 by 4 1/2 inch metal loaf pan with butter.
2. In a large bowl, mix together mashed banana, brown sugar, vegetable oil, eggs, 1 1/2 teaspoon on vanilla extract with a hand mixer on low speed until blended.
3. In a medium bowl, mix together flour, baking powder, salt, baking soda, and pumpkin pie spice until well blended.
4. Add flour mixture to banana mixture and mix on low speed for 2 minutes.
5. Fold in chopped apples and walnuts.
6. Spread batter into prepared pan. Bake in preheated oven until toothpick inserted into cake comes out clean, about 45 minutes.
7. Set on cooling rack for 20 minutes. Remove from pan and let cool completely.
8. Frosting: In a small pan melt butter and brown sugar together on medium-high heat until bubbly. Remove from heat and carefully add cream and 1/2 teaspoon of vanilla extract, stirring thoroughly. Add 1 cup of confectioner's sugar to butter mix and beat until blended add more sugar as needed to get to spreadable consistency. Frost cooled cake.
