Cranberry Cheesecake Bars Recipe from At Home on the Bay

Cranberry Cheesecake Bars Recipe

We love cheesecake in our house, so when our son came for a visit last weekend, I made a batch of these Cranberry Cheesecake Bars. Any recipe that has chocolate chips as one of its ingredients is always a big hit. I managed to get a few pictures of them before they were devoured.

Cranberry Cheesecake Bars

Ingredients

  • 2 cups Flour (plus 2 Tbs, divided)
  • 1 cup quick-cooking oats
  • 3/4 cups brown sugar (packed)
  • 1/2 cup butter (melted)
  • 1 box (8 oz.) cream cheese
  • 1 can (14 oz.) sweetened condensed milk
  • 4 egg whites
  • 1 teaspoon vanilla extract
  • 1 can (14 oz.) whole cranberry sauce
  • 2 tablespoons cornstarch
  • 1/2 cup semi sweet chocolate chips

Directions

1. Preheat oven to 350*F.
2. In a bowl, combine 2 cups of flour, oats, brown sugar and butter. Mix until crumbly.
3. Press 2-1/2 cups of crumb mixture into a greased 13" x 9" baking dish.
4. Bake for 10 minutes. Remove from oven.
5. In a mixing bowl, beat cream cheese until smooth. Add sweetened condensed milk, egg whites, vanilla and remaining 2 tablespoons of flour, mix well. Pour over prepared crust
6. In a bowl combine cranberry sauce and cornstarch, mix well. Spoon over cream cheese mixture.
7. Sprinkle evenly with chocolate chips and top with remaining crumb mixture.
8. Bake for 30 - 35 minutes or until center is almost set.
9. Cool on wire rack before cutting. Yields 3 dozen.
