I don’t know about you, but I’m a little “pin happy” on Pinterest. I pin lots of inspirational ideas and recipes that I plan on trying someday. Well, someday is finally here because there is a Pinterest Challenge -Summer Edition and it has inspired me to try something I’ve pinned. Nothing motivates me more than a challenge.
I saw these bite size Rotel Cups that looked super easy and only had 5 ingredients on Kendall’s blog. Pin.
How can you go wrong with ingredients like: 3 packages of mini fillo shells, 1 – 4.3 oz bag of crumbled bacon, 1 – 10 oz can Rotel diced tomatoes with green chilies drained, 1 cup shredded Swiss cheese, and 1 cup mayonnaise. Right? You had me at bacon.
They are easy to whip up and the recipe makes 45 appetizers – great for a party.
They bake for 15 minutes in a 350* oven. Not only do they taste delicious, but they look nice too – like someone with a culinary degree made them. If you know what I mean?
These bite size appetizers are a crowd pleaser. I tested them on my friends and they were a hit. The fillo gives a nice crunch. The bacon adds the perfect saltiness. The tomatoes are sweet and the chilies add a little bite.
